Winter Fruit Salad

Ingredients
  • 600 grams of high quality dried fruits comprising of pears, cranberries, figs, apricots and pears
  • 700 milliliters of cold water
  • 1 vanilla pod
  • 1 tablespoon of fresh lemon juice
  • 1 Earl Grey teabag
  • Mascarpone cheese or Greek yogurt to your liking and taste. 
  • 3 tablespoons of clear organic honey
Directions
  1. Place the dried fruits into a large saucepan and pour the water over it. Add in the honey
  2. Split the vanilla pod into two and scrape the seeds and place it into the pod.
  3. Bring the mixture to boil while constantly stirring. Lower the heat and let the mixture simmer for about 10 minutes until a syrup like texture forms. 
  4. Remove the pan from the heat and add in the tea bag. Let the tea bag infuse in to the mixture for 10 minutes.  
  5. Remove the tea bag and the vanilla pod and empty the fruits and syrup in to a Non-Metallic Bowl. Add lemon juice to the fruits. Stir well and leave to cool. 
  6. Cover the salad and chill until it is ready to serve. 
Chefs note:

This salad can even be prepared a few days in advance as the flavor gets better with time. The salad will stay for one week once prepared.
