Lentil Soup

Ingredients
  • 450 grams of lentils
  • 1 large onion
  • 1 clove pod
  • 1 tsp fresh thyme finely chopped
  • 1 bay leaf
  • 2 cloves of garlic minced
  • 2 tsp butter
  • 2 tsp fresh mint chopped
  • 8 cups chicken stock
  • Salt and Pepper to taste
Directions
  1. Peel the onion and stick the clove into it. 
  2. Place the onion in a medium-sized sauce pan on medium to high heat along with the lentils, bay leaf, chicken stock, salt and pepper. 
  3. Bring to a boil over high heat and reduce the heat and let the mixture simmer. Keep skimming the soup occasionally for about 30 minutes or until the lentils soften up and are tender. 
  4. Remove the onion and the bay leaf and add the 2 minced garlic cloves, freshly chopped thyme and butter. Stir well.  Reduce the heat to low and simmer slowly for 10 minutes.
  5. Use a ladle to pour your delicious lentil soup into 6 soup bowls and garnish on top with the finely chopped mint leaves.  
Chefs note:

The chicken stock for the soup can be substituted with Vegetarian Stock or Vegetable Bouillon for vegans.
